Is ceramic coating better than PTFE?

Ceramic coatings are technically harder and able to withstand higher temperatures than Teflon-based coatings, but the aluminum base on ceramic pans can leach into food at higher temperatures. Both types of cookware should be used at low to medium heat for safety.

Ceramic coating is generally not as effective as PTFE (Teflon) coating when it comes to preventing food from sticking. Tests conducted by Whitford, a major supplier of nonstick coatings, have found that ceramic coatings have about one sixth the lifespan of PTFE coatings. Additionally, PTFE-coated cookware may withstand meal after meal better than ceramic cookware.
Ceramic cookware does have some advantages over Teflon. It is free of PTFE and PFOA chemicals and produces up to 50% less carbon dioxide in processing due to needing only one layer of coating rather than up to three with Teflon pans. However, at high temperatures, PTFE pans can emit toxic fumes while aluminum base on ceramic pans can leach into food at higher temperatures.
Overall, Teflon-coated non-stick pans release food more effectively and last significantly longer than ceramic pans, making them the better option for minimizing the chances of food sticking.
